Hi folks....been away from the forum for awhile, so I thought I'd dive in with a sure fire meal that's easy and yummy. My family begs for this easy meal at least one of our nights out at camp. Leftovers, if there are any, are great reheated in microwave.
You'll need:
ground beef
potatoes
any vegetable that you like- I use green beans, peas, and corn, drain the liqiud.
take a roll of heavy duty aluminum foil and tear off two good sized sheets. You can leave the skins on the taters or peel them, whichever you prefer. Slice the potatoes into 1/2 inch thick slices. Take a big handful and place them on the foil. Then grab a handful of ground beef uncooked and crumble over the potatoes. Then add your vegetables on top of ground beef. I usually put a small amount of water in the foil to help steam potatoes and keep things moist until done. Then add two more sheets of foil on top and roll up the sides tight so they won't come loose when you turn them. You can cook these over the campfire on a grate or on your grill. I usually cook these on my gas grill set on medium heat for about 25 minutes and then flip them. The foil will puff up from the steam, but that's ok. After turning, cook another 25 minutes. Remove from grill and slice open the top and serve. I usually serve this with crusty bread. No matter how many I make, we never seem to have much in the way of leftovers. My guys like this with ketchup on it. You can season this however you like- I use a little crushed red pepper, some seasoned salt and McCormick's monterey steak seasoning. I also make at least one with onions, jalapenos, and green peppers. You can use whatver vegetable your family likes. After the meal, toss the foil. No pans to wash and you're not slaving over a hot stove in the summer heat.

Now, that brings back a few memories of our pop-up days and weekends at Black Moshannon State Park in central PA!
I wonder, though, if anyone has tried this recipe without adding water. It seems to me lately that the grocery chains are adding water when they grind their beef. At least -- I seem to get more water than grease when I pan fry.

fchammer1...I agree that we are getting a little more water in our ground beef these days. I am always afraid that if I don't add a little water, that the dinner will turn out too dry. I usually add about 1/4 cup.

we have been making this dish for over 40 yeas, and I can say it is one of my favorite dishes. In fact, this is the first meal my wife cooked for me when we first met. Now you know why I like it so. to this day, no kidding.

We make about the same thing, but add some undiluted cream of mushroom soup or cream of chicken soup.

This sounds good but I'm a little confused....
You lay out a sheet of foil, put the yummies on it, then 2 sheets on top? Why 2 sheets?

Normally I use the Reynolds large oven bags since they are very sturdy and already sealed except for one end. you add the goodies and then seal it up. But I haven't been able to find them in the stores lately, so I have been using heavy duty aluminum foil. I use 2 sheets on the bottom and 2 sheets on the top for strength, so they won't break open when you turn them. If you use the aluminum foil just be sure you seal them tight on all four sides.
