We nake it every day. For some reason it does not get bitter.

Yes, the DW does all the time. In a std. size pitcher she puts in 6 regular size tea bags in cold water and lets it set in the sun for a couple of hours.

"Moon tea" can also be made by putting the teabags in the oantainer and putting it in the refrigerator. When you make it this easy it is cold and doesn;t need as much ice that dilutes it. I never really found the taste to be any different.

No. This method (sun/moon) does not get the water hot enough to extract the full potential of the tea leaves, no matter how long it sits.

Well just my thoughts but if somethng has worked for you for however long then you don't necessarily have to change it. If there is another way and it is acceptible to you then it is your choice. I think everyone has done something in their lives that is suppossed to have been harmful but has lived through it with no ill effects.

I found sun tea to be on the bitter side.
MY DH is from the south and loves sweet tea. Best way to make sweet tea is to bring the water to a boil and add the sugar so that it will dilute. Then add the tea bags.
MY MIL use to make sweet tea sooooooooo sweet, you could use it for syrup the next morning! She also made the tea extremely strong. It wasn't bitter, just strong. My DH loved it!
I have modified this sweet tea for my DH. I take a large sauce pan and put about 3 cups of water in it. To that I add three packages of Sweet & Low. Once the water has come to a boil I add 8 decafinated tea bags and boil for about 2 minutes. I squeeze out all the liquid from the tea bags.
In a half gallon plastic pitcher (I use my Tupperware pitcher) I add about two cups of ice and enough water to cover the ice and then I add the hot tea to the cold water adding more cold water to make a full 1/2 gallon container.
The DH loves it, too sweet for my taste though.
